Santa María Street: Between tradition and modernity
On this lively street, you’ll find options that offer the perfect contrast.
At Santamaría´s (Santa María, 18), the décor transports you back to the 1960s. It´s main attraction is the foie gras pintxo with apple compote, served hot and freshly made after you order it at the bar. Right on the same street, for those who prefer the avant-garde, Irrintzi (Santa María, 8) offers bolder, more modern combinations that are constantly changing.
Calle Pelota: A haven of authenticity
Taberna Basaras (Pelota, 2) is one of those places that maintains the spirit of classic Bilbao. It’s a must-visit for sampling the anchovy trainera. What’s more, it’s the ideal spot to try a true local speciality: the grillo.

Iturribide: Flavours steeped in history and contrasts
Walking towards the Iturribide area, the offerings become even more unique.
At Melilla y Fez (Iturribide, 7), Basque tradition gives a nod to the south. It is recognised as the first bar to serve pinchos morunos in Bilbao. Made with lamb and a secret marinade that includes a slight spicy kick, they are a real institution.
A few steps away is Bar Fermín (Iturribide, 4), the undisputed kingdom of cod. Although they prepare it in many ways, their cod al pil-pil is a piece of history served on a small plate.
Somera: The most local atmosphere on thursdays
We couldn’t leave out Somera street, one of the busiest streets among Bilbao’s locals. This is where you’ll find Motrikes (Somera, 41). You only need to step up to the door to catch the scent of their speciality: grilled mushrooms with their famous, slightly spicy secret sauce. It’s a hot, quick and unforgettable bite.
A survival guide to pintxos
If it’s your first time in the city, it’s worth knowing the unwritten rules of Bilbao’s bars:
- Look before you leap: Not all pintxos are on the bar. The best ones are usually the hot ones (such as foie gras, mushrooms or txangurro), which you order directly from the barman so they come straight from the kitchen.
- Don’t pile it on: The idea isn’t to fill a huge plate at a single bar and sit down. Tradition dictates eating one or two pintxos, having a zurito (small beer) or a txakoli, and moving on to the next place.
- Trust the staff: If it’s busy and you don’t know what to order, ask what the house speciality is. Each bar usually stands out for a particular dish.
